Happy Wednesday!

Well its the middle of the week! YAY! Not much to comment on today! This week has been pretty blah for me. For some reason, I have been exhausted! Even with exercising every day, my energy level is very low.

Looking forward to this weekend. Our friends are getting married. R will be a flower girl! Can't wait to see her all fixed up in her pretty dress and shoes!

Have a great Wednesday!  My word of advice for today:

Can't wait to make these little guys again this year! Hurry up cooler weather and Christmas!

Pumpkin Sheet Cake Recipe

Since our first 'cooler' spell a few weeks ago, pumpkin has been on the brain. Of course, due to dieting, thinking is all I can do! I made this on our off week and it was delicious! I love anything pumpkin and this was good!

  • 1 cup vegetable oil

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • FROSTING:
  • 1 (3 ounce) package cream cheese, softened

  • 1 teaspoon vanilla extract
  • 1 3/4 cups confectioners' sugar
  • 3 teaspoons milk
  • Chopped nuts

Bullfrog Race anyone?

Labor Day weekend was spent in the Ozarks. We went to see the outdoor drama, Shepherd of the Hills. It had been several years since we had seen it (since we now normally go in the season when its not playing). We asked R if she wanted to participate in the Bullfrog Race and to our amazement she said yes! R is a girly girl and we couldn't believe she touched that big ol' frog!!! It probably helps that her teacher last year taught them not to be afraid of bugs and critters! We will give that wonderful teacher credit for it ;) Mr. Bullfrog (or Ms) didn't win because I think she had squeezed him almost dead! He wouldn't jump till everyone elses jumped and then he went the wrong way!!!
Here is her new friend, Mr. Bullfrog:

Best Banana Puddin' Recipe

Yes, the last post is about dieting, but DH and the guys at work have requested a Banana Puddin'. Thought I would share the recipe. It is my MIL's recipe and a GOOD one! It was HARD not to lick the spoon after opening the Sweetened Condensed Milk. LOL That stuff makes GOOD desserts!!!

Ingredients needed:
Mix up Jello Vanilla Pudding according to directions w/3 cups milk. Let sit for few minutes in fridge, while your mixing up the next few ingredients.
Mix your softened cream cheese (8 oz) with can of sweetened condensed milk. Beat until all creamy. Then mix cream cheese mixture with the pudding. Fold in 1/2 of CoolWhip. In large bowl, layer pudding mixture, cookies and bananas. Repeat about 3-4 times. Top with rest of Cool Whip. Decorate top of Cool Whip with remaining cookies and crumbs if you wish!! Enjoy!
Or if you prefer it the way I do, just leave out the bananas for some good pudding and cookies!!!

Game On

Well round 2 of The Game On Diet has began as of yesterday. Round one was successful. We had 9 ladies play and we lost 90 pounds all together! I lost 12.6 myself. We had 1 week off then started again yesterday. My goal is to loose all these extra pounds I've been carrying for so many years. I have approximately 42 more I want to loose. I am determined this time to loose it for good! Good luck to the other 13 players this round! We will do great again.

This is my goal :) (Sorry K&K this was the first pic I found to use and yall happen to be there with me!)

Pecan Festival

Well this festival has came to an end. Love this time of year. Good junk food (thankfully it fell on the off week of Game On), trying to decide what ride is to be ridden next, tiny bit cooler weather and mosquitos of course!!! This year was especially fun for R as she would see friends from school and got to ride rides with them. No fun riding by yourself!!
Till next year....

My sweet nephew, turned 9, and I got to make his 'dirt bike cake. We had looked at cakes a few months ago and he showed me what he wanted. Dirt bike w/ waterfall and rocks and such.  Well when it came to yesterday, I couldn't 'feel' the cake that I was supposed to do! There was something about the cake, I didn't like. So I hoped and prayed he would be ok with me doing something a bit different than we had talked about! He told me when he seen it, he liked it better than the other one we had looked at! (if he didn't, he sure was nice about it LOL )  I love being able to bake my neice and nephews cakes! This nephew also gave me the biggest compliment on his sisters cake in June. I Do better than the store ;) That means alot coming from your nephew! Cake was double 10 inch on bottom. Vanilla cake with bavarian cream filling. Top is same flavor in 8 inch. Glob of icing on top covered with crushed oreos. Fondant accents.

The other cake was for a bridal shower. Excuse the table, I didn't get another picture of it w/o other cakes around!! Gumpaste bra and panty with buttercream polka dots (made ahead about 2 days before). Bag is vanilla cake w/buttercream filling. Fondant 'tissue paper' and stripes and handle. The cake is 9x13 cut in half and stacked.

Welcome!

Welcome to my blog! Just a place to put pictures of my hobby: cakes, cupcakes and about our life! Not a pro, but love to have fun with the cakes I create.
